Cowboy Casserole…

Daily writing prompt
What food would you say is your specialty?

I am not the greatest cook, but I do love cooking. I like to be creative in the kitchen and try new recipes I find either on Tik Tok or Instagram. I would say my food specialty is either Green Bean Casserole or Cowboy Casserole. I found the cowboy casserole dish back in 2020 when I was looking for something that was home cooked and had a mama or grandma casserole kind of feel. I fell in love with the dish, and I enjoy that it is versatile.

I make the Cowboy Casserole Dish this way, but it can be adjusted.

2lbs Ground Beef (I often use ground turkey for a healthier alternative- you also could use less or more meat depending on the amount of people your feeding)

1 8oz cup of Sour Cream

1 frozen bag of corn thawed

1 can of diced tomatoes (I like to add the chili ready tomatoes as I feel it helps add more flavor)

1 cup of shredded cheddar cheese (Again, this can be versatile I like to switch up the cheeses like with Colby Jack or Taco season shredded cheese)

1 bag of tater tots (I like to use the mini frozen tots)

1 cup of shredded cheese (same as before)

You cook up the ground beef or ground turkey for about 10 minutes. -You can add whatever seasoning that you like to your meat. I tend to add some pepper, salt, chili powder, and diced onions.

Drain the meat then return to skillet.

I then add the thawed corn (if corn is frozen, you can cook it first and then add it), sour cream, diced tomatoes, 1 cup of cheese, and mix it all together.

You will take that mixture and relocate it into a casserole dish spread it evenly.

Layer the frozen tater tots on top then pop in the oven at 400 degrees for 20 minutes or until tater tots are golden crispy to your liking.

The last cup of shredded cheese you can put on the last 3 minutes of the baking session.

There are multiple ways to make the Cowboy Casserole dish, like I said it’s versatile which makes it a fun dish especially for families. This is a specialty of mine.
